I currently have a rocketfish Bluetooth transponder connected to my Realistic SA-2080 receiver powering some Sansui SP-2500’s. I’m wondering if buying a DAC is going to improve audio quality substantially.

It could, but the real limiting factor would be the Bluetooth codec being used. For example, I have an iPhone which only uses the AAC codec. AAC’s maximum quality is approximately 16/44.1 (but not quite) so a DAC isn’t going to help much with that.
If you have other digital sources it could be worth trying out
